eggs florentine Easy and Authentic Mexican Guacamole Avocado Dip

A PERFECT GUACAMOLE DIP

I’ve tasted many versions of this. The shop bought ones are the worst! Some people’s idea of guacamole is to just mash an avocado – that’s it! No flavour at all.

I learnt to make guacamole in the country it originates from – Mexico, where avocados are the size of melons!

It is really important to make sure the avocado is the perfect ripeness. If it’s too hard, it will never mash. If it’s over-ripe, it will be black, stringy and taste of car wheels (not that I’ve tasted car wheels!).

So, here goes – this will do for 2

1 ripe avocado
Juice from half a lemon or lime
1 Garlic clove or 1 finely chopped spring onion
Chilli – either sauce, or a finely chopped fresh one –amount according to taste
Paprika
1 teaspoon of mayonnaise or sour cream (optional)
Salt and pepper

Open the avocado (see my demo video)
Scoop out the flesh
Mash with a fork
Add in all the other ingredients

Serve with tortilla chips, crudités, hot pitta bread, or anything that takes your fancy Nice on toast too!
