GLUTEN FREE PASTRY

Ingredients

100 grams (4oz) cold butter chopped up a bit
200 grams (8oz) Gluten Free Plain Flour
3 tbsp (approx.) of cold water

METHOD

Put the flour and butter into a electric mixer and blend to breadcrumb consistency
Or put into a bowl and gently rub the butter into the flour (see Judy’s demo of this method!)

Gradually pour in the cold water, until you have a firm dough – add more water if it is too dry, or use less if it’s too wet. If it does seem too wet, just add in a dash of flour!

Cut a piece of parchment paper (parchment, NOT greaseproof!). It needs to be bigger than your flan case.

Knead the pastry into a ball shape and place in middle of parchment. Flatten it out a bit with your hands. Give it a good slap!

Then place two pieces of cling film over the top, overlapping slightly. With your rolling pin, gently start to roll it out, using a stroking action with your hands if you incur any cracks or creases!

When you are happy that is is big enough to fill the flan case, just lift it up on the parchment paper, and gently lower into the flan case. Keeping the cling film in place, smooth it out again with your hands, ironing out any cracks. Press it firmly into the sides of the flan case, and fill any cracks like a patchwork, with any spare pastry. Trim the top for this first!

Take the cling film off (you don’t want to put that in the oven for obvious reasons!) and then add your filling.

I recommend that you don’t try to pre-bake (blind bake) this flan case, as in my experience, it just cracks and splits beyond repair!

Best to put the filling in (whether it be for a savoury or sweet flan) and cook it slowly for a long time (e.g. on approx. 120 c, for about an hour at least). That will ensure that it’s bottom get’s cooked properly. Nothing worse than a soggy bottom!
