eggs florentine Thai Curry

THAI GREEN CHICKEN CURRY

INGREDIENTS (serves 4 - 6)
4 – 6 Chicken breasts (allow one per person)
Small piece of fresh ginger
1 – 2 cloves garlic
3 spring onions
1 packet of fresh coriander
1 Lime
Tbsp of light Olive Oil
Tbsp of Sesame Oil
Tbsp of Soy Sauce
1 desert spoon Tom Yum Paste
1 desert spoon Green Curry paste
1 tbsp peanut butter
1 can coconut milk
1 tsp boullion (optional)
1 pack of baby leaf spinach

METHOD
Dice chicken breasts into bite sized pieces
Peel and grate the ginger
Peel and finely chop the garlic
Peel and chop Spring onions
Finely chop the Coriander
Squeeze the lime
Pour in the olive and sesame oils into Wok or saucepan
Put in the Spring Onions, garlic and ginger and lightly fry
Add the Tom Yum and Green curry paste
Add Soy sauce
Add in the chicken and brown
Add peanut butter, coconut milk, lime juice, ¾ of the coriander and the spinach

Stir all ingredients together for about 10 minutes, until chicken is properly cooked!

Put in serving dish and top with remaining coriander

(If you want the curry to look nice and green, you can liquidize some of the spinach and coriander in with the coconut milk and lime juice).




STIR FRY VEG

INGREDIENTS
1 red pepper
Packet of mixed stir fry veg
Light olive oil
Sesame oil
Soy sauce
Sweet Chilli sauce (or Hoi Sin is nice, or both!)
1 Spring Onion
2 Kaffir Lime leaves (optional)

Chop red pepper and cut into fine strips
Chop Spring onion
Pour in olive and sesame oil into wok or saucepan
Add soy sauce, sweet chilli and/hoi sin sauce
Add Pepper, spring onion and pack of stir fry veg
Cook for approx. 2-3 mins

You can of course invent your own combination of vegetables for this. Anything goes – try baby corns, mangetout, pak choi, broccoli, fine beans – any variation will do. Add water chestnuts or bamboo shoots or find a mixed pack with all those ingredients already in them!
